APPLE SAUCERS

Vera McRae 1 1/2 dozen

Step 1 ½ c butter Cream ingredients together. 1 c brown sugar 1 egg 1 t vanilla Step 2 2 c flour Add dry ingredients alternately with applesauce and blend 1 t baking powder well. 1 t pumpkin pie spice ½ t baking soda 1 c applesauce Step 3 1 c currants Stir in currants and nuts. Drop dough 1/4 cupful at a time, 1 c chopped nuts 6” apart on a greased cookie sheet. Spread into 6” rounds. Bake at 350 for 15 minutes.

CHOCOLATE KISS PEANUT BUTTER COOKIES

Vera McRae Makes 15 giant cookies

Step 1 2 2/3 c flour Sift flour with soda and salt and set aside. 2 t baking soda 1 t salt Step 2 1 c butter, soft Beat butter and peanut butter in mixing bowl on medium 2/3 c creamy peanut butter speed until well blended. Add sugars and beat until light 1 c sugar and fluffy. Add eggs and vanilla and beat until smooth. 1c brown sugar Stir in flour mixture until well combined. Measure 1/3 c 2 eggs dough and shape into balls. Roll each ball in granulated 2 t vanilla sugar. Place two or three at a time on ungreased cookie 45 foil wrapped chocolate kisses sheets. Flatten into 4” rounds. Bake 8 minutes. Remove from oven. Press three kisses into center and return to oven baking 6 minutes longer, or until golden-brown.

COLOSSAL COOKIES

Step 1 ½ c butter Beat all ingredients together. 1 ½ c sugar 1 ½ c brown sugar 4 eggs 1 t vanilla 2 c chunky peanut butter Step 2 6 c oatmeal Stir in dry ingredients, mixing well. Drop by ¼ cupfuls 1 c chocolate chips on ungreased cookie sheet. Flatten with a fork to2 ½ 2 ½ t soda inches in diameter. Bake 10 to 12 minutes at 350 degrees. Cool 1minute then remove to wire cooling rack. Store tightly covered. For smaller cookies, drop dough by rounded teaspoons and flatten to 1 1/4 inches, baking for 8 to 10 minutes at 375 degrees.

GIANT CHOCOLATE CHIP COOKIES

Step 1 1 c butter Cream butter until light. Gradually beat in sugars, ¾ c light brown sugar then eggs, beating until very light and fluffy. ¾ c sugar 2 eggs, beaten Step 2 2 ¼ c flour Sift flour and salt. Dissolve soda in water. Add 1 t salt flour mixture to butter mixture alternately with soda. 1 t soda 1 t hot water Step 3 12 oz chocolate chips Stir in rest of ingredients. Chill overnight. Roll 1 c chopped walnuts 1/3 c of dough with hands to form a ball. Place 3 1 t vanilla balls on cookie sheet. Press flat with fingertips to make a 5” round. Bake at 375 10 to 12 minutes. Cool on wire rack. Step 4 ¼ c chocolate chips If desired, melt chocolate chips and butter and 2 t butter drizzle over cookies.

OLD-FASHIONED SUGAR COOKIES

Step 1 1 c butter Cream ingredients until light and fluffy. 1 c sugar 1 egg 1 t vanilla 1 t lemon peel Step 2 2 c flour Add ingredients to mixture and beat. Drop 1/3 cup 1/2 t salt of dough on ungreased cookie sheet. With floured 1/2 t cream of tartar fingers, press cookies to flatten into 5” rounds. Powdered sugar. Bake at 400 for 8 to 10 minutes. Cool on wire rack. Sift confectioners’ sugar over top of cookie, if desired
