TASSAJARA BRAIDED CHRISTMAS BREAD

Step 1

lukewarm water ¼ c  
yeast 3 T  
honey 1 T  
  • Mix all ingredients and let proof.

Step 2

milk 4 c scalded
butter ½ c  
  1. Mix milk, butter and honey, until butter is dissolved.
  2. Add yeast mixture.

Step 3

unbleached flour 5 c  
eggs 6 separated
  1. Add flour to make a soft sponge.
  2. Beat yolks and whites separated.
  3. Fold yolks into sponge, then fold in egg whites.
  4. Cover dough and let rise until double.

mace 1 t  
vanilla 2 t  
candied fruit 2 c minced
nuts 1 c chopped fine
  • Add ingredients to sponge.

Step 5

unbleached flour 10-13 c  
  1. Fold in flour until you can work it with your hands.
  2. Turn dough onto floured board and knead 150 times, adding enough flour to make dough elastic.
  3. Return to clean, oiled bowl and let rise until double.
  4. Divide dough into 4 equal parts.
  5. Take one part and divide into 3 equal sections.
  6. Roll each section to form a long pencil-like strip.
  7. Pinch the 3 sections together at one end and make braid, pinching off other end. Let dough rise again.
  8. Brush bread with slightly beaten egg white if a shiny crust is desired. Then bake at 300 for about 30 minutes or until browned.

  1. Mix ingredients to make a light icing.
  2. Drizzle over breads and place cut candied cherries on top for decoration.
