BROWNIE DROPS

Vera McRae 3 dozen

Step 1 2 eggs Beat eggs until foamy. Beat in sugar 2 T at a time until ¾ c sugar thickened. (This takes about 5 minutes.) Blend in 8 oz German Sweet chocolate, chocolate and butter. melted 1 T butter, melted Step 2 ¼ c flour Mix in dry ingredients and blend well. ¼ t baking powder ¼ t cinnamon Dash of salt Step 3 ¾ c chopped pecans Stir in pecans and vanilla. Drop by teaspoonfuls onto ½ t vanilla greased cookie sheet. Press pecan half into each cookie. Pecan halves Bake at 350 for 10 minutes.

BUTTERMILK OATMEAL COOKIES

Vera McRae 4 dozen

Step 1 1 c shortening Mix all ingredients. 2 eggs ½ c brown sugar ½ c buttermilk Step 2 1 ¾ c flour Add all ingredients and mix thoroughly. Drop by 3 c oatmeal teaspoonfuls 2” apart on greased cookie sheet. Bake 1 t baking powder at 400 for 8 minutes. Cool slightly, then remove from 1 t salt cookie sheet. 1 t soda 1 t cinnamon 1 t nutmeg ½ c walnuts 1 c raisins

CHOCOLATE CHIP COOKIES

Pennie McRae 7 dozen

Step 1 ½ c butter Blend ingredients until creamy. 6 T sugar 6 T brown sugar 1 egg ½ t vanilla ¼ t water Step 2 1 c flour Add ingredients to creamed mixture and mix thoroughly. ½ t baking soda Step 3 1 c chocolate chips Add nuts and chocolate chips and mix. Drop by tea ½ cup nuts, chopped, optional spoonfuls onto ungreased cookie sheets. Bake at 375 for 8 to 10 minutes.

COCONUT OATMEAL COOKIES

Vera McRae 4 Dozen

Step 1 ½ c butter Cream ingredients together. ½ c sugar ½ c brown sugar 1 egg 1 t vanilla Step 2 1 c flour Add dry ingredients and mix thoroughly. Drop by ½ t baking powder teaspoonfuls onto ungreased cookie sheet. Sprinkle ½ t salt with additional coconut and bake at 375 for 9 to 12 ½ t baking soda minutes. ½ c oats 1 c coconut CRUNCHY GRANOLA DROPS Vera McRae 2 ½ Dozen

1/3 c butter Cream butter, sugar, egg and vanilla. Add dry ¾ c brown sugar ingredients. Drop by tablespoonfuls onto lightly greased 1 egg cookie sheets. Bake at 400 for about 8 minutes. Cool 1 t vanilla on wire racks. 1 c flour ¼ t soda ¼ t salt 1 ½ c granola ½ c chopped nuts

DOROTHY’S COOKIES

Vera McRae 3 dozen

1 c shortening Cream together shortening, sugars, eggs and vanilla. 1 c brown sugar Blend in flour, soda and baking powder. Stir in oatmeal, 1 c sugar rice Krispies and coconut one at a time until thoroughly 1 t vanilla mixed. Drop by teaspoonfuls onto greased cookie sheet. 2 eggs Bake at 350 for about 10 minutes. 1 c flour 1/2 t soda 1 t baking powder 1 c oatmeal 1 c Rice Krispies 1 c coconut

FROSTED 3-WAY CHOCOLATE DROPS

Step 1 2 oz unsweetened chocolate Mix ingredients thoroughly. squares, melted ½ c shortening 1 egg ½ c buttermilk 1 c brown sugar 1 t vanilla Step 2 1 ½ c sifted flour Add ingredients and mix completely. Drop by tea- ½ t baking powder spoonfuls onto greased cookie sheet. Bake at 375 for ½ c chopped walnuts 10 minutes. Cool. ½ t soda ¼ t salt 6 oz chocolate chips Step 3 ¼ c butter Cream together. 2 t instant coffee 2 T cocoa Dash of salt Step 4 2 ½ c powdered sugar Beat in powdered sugar, vanilla and enough milk to 1 ½ t vanilla make a spreading consistency. Spread frosting over About 3 T milk cookies.

GRANDMA’S OATMEAL COOKIES

Step 1 ¾ c shortening Cream together. [Variation: For a healthier cookie, reduce 1 c brown sugar brown sugar to ½ c, and add ¼ c molasses + 3 T honey. ½ c sugar Reduce water to 1/4 c. Reduce white flour to 1/2 c 1 egg and add 1/4 c whole wheat flour and 1/4 c wheat germ.] ¾ c water 1 t vanilla Step 2 1 c flour Add ingredients and blend well. Drop by teaspoonfuls ½ t salt onto greased cookie sheets. Bake at 350 for 12 to 15 1/2 t soda minutes. (May add 1 c chopped walnuts, raisins, dates 3 c oatmeal coconut, chocolate chips, or butterscotch chips or a combination before baking.)

HAZEL’S GINGER SNAPS

Step 1 ¾ c shortening Mix shortening, egg, molasses and sugar together. 1 egg 4 T molasses 1 c sugar Step 2 2 c flour Add dry ingredients to sugar mixture. Roll into 2 t soda balls and sprinkle sugar on top. Place 2” apart 1 t ginger on ungreased cookie sheet and bake at 325 for 20 1 t cinnamon minutes. Sugar

HAZEL’S MOLASSES COOKIES

Step 1 1 c shortening Mix thoroughly. 1 c sorghum molasses 1 c sugar 1 c sour milk Step 2 5 c flour Add dry ingredients. Roll out and cut into 2 t soda shapes. Sprinkle with sugar. Bake on ungreased 1 t salt cookie sheet at 400 for about 12 minutes. 2 t cinnamon 1 t ginger ½ t cloves ¼ t nutmeg

LACY OATMEAL COOKIES

Vera McRae 6 dozen

Step 1 4 c oatmeal Mix ingredients and let stand overnight. 2 c brown sugar 1 c oil Step 2 2 eggs Beat together, then add oatmeal mixture and mix. Bake 1 t almond extract at 325 on well-greased cookie sheet 15 to 20 minutes. ½ t salt Be sure to leave lots of space between cookies as the dough spreads out.

M&M COOKIES

Pennie McRae 5 to 6 dozen

Step 1 1 c shortening Cream thoroughly. 1 ½ c sugar 3 T molasses 2 eggs 2 t vanilla Step 2 2 ¼ c flour Add dry ingredients and mix well. Stir in M&Ms. 1 t soda 1 t salt ½ c M&Ms Step 3 1 c M&Ms Drop cookies by teaspoonfuls onto ungreased cookie sheet. Decorate cookies with M&Ms. Bake at 375 for 10 to 12 minutes.

OATMEAL CRISPS

Vera McRae 5 Dozen

Step 1 5 eggs Beat eggs and add sugar. Stir in melted 2 ½ c sugar margarine and vanilla. 2 1/2 T melted margarine. 2 ¼ t vanilla Step 2 5 c quick oatmeal Combine dry ingredients and mix well with eggs. 5 t baking powder Drop by small teaspoonfuls on well sprayed cookie 1 ¼ t salt sheets. Bake at 325 for 10 minutes or until golden brown. Remove from pan before they cool and stick.

OLD-FASHIONED OATMEAL COOKIES

Pennie McRae 6 to 7 dozen

Step 1 1 c raisins Simmer raisins in water over low heat 20 minutes or 1 c water until raisins are plump. Cool. Drain liquid into measuring cup adding enough water to make 1 cup. Pour into mixing bowl. Step 2 ¾ c shortening Mix ingredients together with raisin liquid until creamy. 1 ½ c sugar 2 eggs 1 t vanilla Step 3 2 ½ c flour Add ingredients to creamed mixture and blend in. ½ t baking powder 1 t soda 1 t cinnamon ½ t cloves Step 4 2 c oats Add oats, nuts and raisins to cookie dough. Drop by ½ c nuts, chopped teaspoonfuls about 2” apart on ungreased cookie sheet. Bake at 400 for 8 minutes, or until lightly browned.

QUICK COOKIES

2 eggs, beaten Cream mixture together thoroughly and drop by tea- 2 t vanilla spoonfuls onto cookie sheet. Bake at 350 for 10 ¾ c sugar minutes. 2/3 c oil 2 c flour 2 t baking powder

SNICKERDOODLES Pennie McRae 6 dozen

Step 1 ½ c shortening Mix ingredients thoroughly. ½ c butter 1 ½ c sugar 2 eggs Step 2 2 ¾ c flour Blend dry ingredients into creamed mixture. 2 t cream of tartar 1 t soda ¼ t salt Step 3 2 T sugar Mix sugar and cinnamon together. Shape dough into 2 t cinnamon 1” balls and roll in sugar mixture. Place 2” apart on ungreased cookie sheet. Bake at 400 for 8 to 10 minutes. SOUR CREAM OATMEAL COOKIES Vera McRae 5 dozen

Step 1 ½ c butter Cream ingredients together. ½ c dark brown sugar ½ c sugar 1 egg 1 t vanilla Step 2 1 ½ c flour Add to creamed mixture. ½ t soda ½ t salt Step 3 1 c finely-cut pitted dates Add dates and oatmeal alternately with sour cream. ½ c sour cream Drop by level tablespoonfuls 2” apart onto lightly 1 c oatmeal greased cookie sheets. Bake at 375 for 12 to 15 minutes. Place on wire rack to cool.

UNBAKED CHOCOLATE OATMEAL COOKIES Pennie McRae 4 dozen

Step 1 2 c sugar Mix ingredients in saucepan and cook. Bring to a boil 6 T cocoa and boil 3 minutes, stirring constantly. Remove from ½ c butter heat. ½ c milk ¼ t salt Step 2 1 t vanilla Add vanilla immediately and stir. Add oatmeal and 3c oatmeal mix. Drop by teaspoonfuls onto wax paper.
